Xanthane gum (xanthan) — natural chemical compound, belongs to group of stabilizers. By the chemical nature xanthane gum represents the polysaccharide received by fermentation with use of bacterium of Xanthomonas campestris. It is used in the food industry as thickener, the stabilizer, geleobrazovatel, means for capsulation.
Scope. Xanthane gum is very strong thickener whose action does not depend on acids, salts, heating and mechanical influence. Thanks to chemical stability and independence of external influences xanthane gum is especially suitable for bodying and/or jellification of silnokisly and solenosoderzhashchy products. Has the good stabilizing effect on emulsions, suspension and foams. It is well soluble in cold and hot water, milk, and also in saline solutions and sugar. Use of xanthane gum allows to increase viscosity and elasticity of forcemeat, to receive stabler and plastic structure of ready-made product, to reduce losses of moisture at heat treatment and the subsequent storage of ready-made products.
It is widely used in production of sauces, canned fishes, mayonnaise, dairy products, ice cream, fruit and vegetable canned food, desserts, grain products, drinks.
