Description: Ksantanovy gum - the natural polysaccharide applied as a thickener, a geleobrazovatel and the stabilizer. Possesses high solubility, both in cold, and in hot water, milk, and also in solutions of salt and sugar. Ksantanovy gum mixes easily up and absorbed by other substances, forming stable suspensions. In combination with guar gum shows a sinergizm. Ksantanovy gum renders the following technological effects:
- to increase viscosity and elasticity of forcemeat; - allows to receive stabler and plastic structure of a ready-made product; - to reduce losses of moisture at heat treatment and the subsequent storage of ready-made products.
Solution of a ksantan is steady to kferment, alcohols, surfactant, to acids (kromesolyany) to ishchelocha, high (to 120ºС) and low (to −18ºС) to temperatures. In mix with other gum the effect of a zagushcheniye is higher, than for each thickener separately. High values of viscosity in the range of pH from 2 to 12 and pseudo-plasticity are characteristic of solution of a ksantan. Thanks to these properties forms good structure, well stabilizes products and increases terms of their storage.

The sphere of industrial use of ksantanovy gum is rather wide in connection with acids and alkalis resistance, to high and low temperatures, alcohols and fermant. Addition of ksantanovy gum raises a products expiration date, and also reduces loss of liquid at heat treatment.
