The dry rye malt fermented represents a unique natural product which is received on the basis of germinated rye grain which is exposed to fermentation, drying and the subsequent grinding.
The fermented rye malt is used in pastries for improvement of color of rye bread - the crumb receives a pleasant brown - brown color, and also characteristic malt taste and a smell.
