84-86% of the fat which is contained in corn are the share of the corn germ making 8-14% of mass of corn grain. The germ is raw materials for production of corn oil, and also one of the making corn forages.
Nonsaturated fatty acids (linoleic 56%, olein 30%, linolenovy 0,7%) and 14% saturated are a part of fat of a germ. The proteinaceous part of a germ contains about 37% of globulins, 51% of a glyutelin, 5% of zein and 7% of insoluble fats. The germ contains a big set of amino acids and is rich with vitamin E (tocopherol), betasitostirony and phytin.
