Syrup sugar "Leipomo" - syrup sugar, viscous liquid of brown color with pleasant aroma. It is concentrated (sv 80%), partially inverted sugar solution consisting of sucrose, glucose and fructose.
It is applied:
- For preparation of bakery, rich products, easter pastries, croissants, cookies, gingerbreads etc. Syrup is added directly to dough, at the same time promotes increase in volume of products and prolongs the term of freshness of finished products.
Also it is used in:
- Confectionery branch (for preparation creamy fondants, an iris, caramel)
- In dairy branch for preparation of sauces, desserts and marinades.
All sugar used on a compounding in bakery products can be replaced with sugar syrup at the rate of 1 kg. sugar = 1,25 - 1,5 kg. sugar syrup, in this case degree of sweet I will be identical.
