Apple purée

For preparation of mashed potatoes apples at first clean from core and cut on pieces, then cook with addition of sugar and cinnamon. Depending on grade of apples of mashed potatoes it turns out different consistence and color, from yellow to pink. Considerable impact on color of mashed potatoes is exerted by use of peel of apples.

Apple puree is used as semi-finished product for the confectionery industry, in particular by production of zephyr and fruit candy, also it is used as dessert or added to such dishes as hash browns or even to meat.
