Semolina depending on a type of the processed wheat is subdivided into three brands: M — from soft wheat, T — from solid wheat and MT — from mix of soft and solid wheat. Semolina consists of particles grain endosperm therefore it is characterized by a large amount of starch, a small share of cindery elements and fat. The small size of grains and insignificant amount of cellulose cause their fast razvarivayemost and high comprehensibility of the prepared culinary products. Grain cooks 10-15 minutes, increasing in volume by 4-5 times, has a gentle soft consistence. It is widely used in baby and dietary food.
