Description
It is intended for production of products of cold smoking from meat, fish, a bird, cheese at the enterprises for processing of foodstuff.
Differs in ecological purity, due to lack of emissions in the atmosphere, in profitability in work including on a consumption of wood material that allows to apply rare and environmentally friendly compoundings of preparation, safety of a design. Has the highest productivity, in comparison with any equipment of similar appointment.
The principle of action of installation consists in application of effect of an electrostatic charge of a smoke in the course of smoking of food that accelerates sedimentation of koptilny substances from a smoke on a product by 50-100 times therefore process of cold smoking is reduced from 1 days to 20 - 40 minutes. Loading volume for a cycle - 50 kg, at the same time all smoke getting to a chamber is besieged on a product.
Also drying of a damp product "electronic wind" is possible.
The smoke generator, on spill, with temperature condition of 280-300 °C, provides a koptilny chamber with a smoke. The water filter is used to additional cleaning of a smoke of high-molecular connections in a design.
At the exit of a koptilny chamber the electric precipitator which excludes emission of a smoke in the room is installed.
All parameters of work of installation are set and controlled by the microprocessor control unit. In non-volatile memory 5 modes of smoking, for various products remain. The control unit depending on the set quantity of the besieged smoke on a product and productivities of a smoke generator automatically chooses smoking time.
