Food stabilizers are a special group of the additives applied in different branches of the food industry which main appointment is formation and preservation of a consistence, textures, forms and consumer qualities of products of dairy, meat-processing, baking and confectionery productions.
Due to the increase in volume of world production of food along with the traditional stabilizing food additives, such as starches began to be used widely stabilizers of an animal origin (gelatin) and a phytogenesis (gum, pectins, karraginana) which are developed especially for stabilization of these or those products and they work as multipurpose systems depending on the used stabilizers. Codes from E400 to E449 are appropriated to these stabilizers.
Application of food stabilizers is found under a constant control of the national and international organizations providing reliability of foodstuff concerning their safety. Existence of food stabilizers in products is specified on consumer packing, a label, bank, a package. They are designated by an index E with three-digit number. The list of the resolved food stabilizers for production of foodstuff constantly is reconsidered and updated in connection with obtaining new scientific data on their properties and introduction of new preparations.
