The kvass mash is 100% a natural product from rye and barley malt with rye wallpaper flour which represents viscous dense liquid with the content of solids 70%+2, dark brown color, sourish and sweet on taste.
It is made according to requirements of the standard - state standard specification 28538-90 "Concentrate of a kvass mash, concentrates and extracts of kvass" - on compoundings and technological instructions with observance of the sanitary standards and rules approved in accordance with the established procedure.
Apply to preparation of a kvass mash: malt dry rye fermented and not fermented (malt barley), wallpaper rye flour baking.
Addition of a kvass mash in dough in quantity from 1% to 9% to the mass of flour intensifies spirit fermentation, reduces time of residual fermentation of test preparations, increases test volume, increases gold-brown color of a crust, prolongs an expiration date of finished products. The structure of porosity of a crumb becomes well developed. Bread has pleasant rye aroma and good taste.
