In 1961, a real revolution happened in the brewing industry. Since this year, synthetic silica (amorphous silicon dioxide) has been used for protein adsorption and, in general, for clarification of beverages made on the basis of natural plant materials .
Synthetic silica created specifically for the purification of food drinks (beer, kvass, juices, etc. ) from protein turbidity and polyphenols is a white powder with a porous surface that meets the following parameters: insoluble in water and other solvents, odorless, harmless and is an environmentally friendly product, stable to high and low temperatures, has a large specific surface area, absorbs protein, which causes clouding of food drinks created on the basis of natural components of the plant th origin, and effectively removes it by filtration .
As a result, due to the treatment with amorphous silicon dioxide, the drinks remain transparent and have no precipitate, and their shelf life grows to 150 - 240 days. Filtration with specialized synthetic silica does not have any negative effect on the quality of the drinks - their taste and aroma are preserved in their original form.
At present, our company has launched the production of synthetic silica for clarification (stabilization) of food liquids Kovelos - Stab in the form of xerogel, hydrogel and sol.
Kovelos - Stab is introduced into the finished drink before bottling in a dose of 40 - 70 grams per hectoliter. The greatest efficiency of clarification is achieved at a temperature of 0 degrees C. At this temperature, the substances that cause turbidity become insoluble and quickly absorbed. It is used both for stabilization in the stream and for stabilization (clarification) in containers. The process of clarification (stabilization) lasts several minutes. Longer contact with the stabilizer does not adversely affect the drink. A combination of a stabilizer (clarifier) with other additives (processes) is possible.
It is worth noting that, unlike bentonite, Kovelos - Stab does not swell and thereby avoids loss of the drink.
This is a powerful sorbent, so it should be stored closed in a dry, cool place without any odors. Started packaging should be used as quickly as possible.
In view of the many methods for the production of food drinks based on natural plant materials, it is important for the manufacturer to develop an individual approach to the use of stabilizers (clarifiers) Kovelos - Stab.
Already now, according to the results of laboratory tests, we can confidently say that the quality of our product is at the level of imported beer silica gels.
