Lemon acid - 2 - hydroxy - 1, 2, 3 - propantrikarbonovaya acid, 3 - hydroxy - 3 - karboksipentandiovaya) (C6H8O7) - crystal substance of white color, temperature of melting is 153 °C, well a rastvorima in water.

As a cycle of trikarbonovy acids use all aerobic organisms at breath, lemon acid in a certain concentration contains in the majority of prokariot and almost in all eukariota (mainly in mitochondrions). In the greatest concentration it contains in a number of plants: in berries, fruits of a citrus, needles, makhorka stalks, especially there is a lot of it in the Chinese magnolia vine and immature lemons.

Acid, as well as its salts (sodium citrate, potassium citrate, calcium citrate), is widely used as a flavoring additive, the regulator of acidity and preservative in the food industry (food additives of E330 — E333), for production of drinks, dry sparkling drinks.
It is applied in medicine, including as a part of the means improving a power exchange (in Krebs's cycle).
In cosmetics it is used as the acidity regulator, the buffer, the helatiruyushchy agent, for sparkling compositions (bathtub).
In oil industry when drilling oil and gas wells it is used for neutralization of cement in solution (for example, after cut from the cement bridge). Lemon acid deletes calcium ions from drilling mud fluid.
At intake in small doses (for example, at the use of a citrus) activates Krebs's cycle that promotes acceleration of a metabolism. At a hangover is considered by toxicologists as a measure of chemical desintoxication.
