Acid ascorbic

Ascorbic acid — organic compound, is one of the main substances in a human diet which is necessary for normal functioning of a connecting and bone tissue. Performs biological functions of a reducer and coenzyme of some metabolic processes, is antioxidant. Only one of isomers — L - ascorbic acid which is called vitamin C is biologically active.

Ascorbic acid in products. Significant amounts of ascorbic acid contain in currant, a mountain ash, a dogrose, and also many vegetables and fruit, in fruits of its citrus it is a little.

Ascorbic acid is applied in the following areas of the food industry:

  • in sausage and canning production, for prevention of formation of N - of nitrozoamin from nitrates and nitrites;
  • by production of all types of meat products, for acceleration of formation of coloring, improvement of their appearance and increase in stability of color at storage;
  • in production of melted animal fats and oils, margarine;
  • in production bakery and pasta;
  • in production of juice, wine, beer, soft drinks;
  • in production of dry products (drinks, dietary products);
  • in production of potato semi - finished products;
  • in production of sweets;
  • in production of fruit and vegetable canned food, jams.

Ascorbic acid is used in the following purposes:

  • for enrichment of food vitamin C (fruit juice, soft drinks, dry drinks, fruit and vegetable purees, dry breakfasts, lollipops, fruit jelly, chewing gum);
  • for standardization of content of vitamin C (fruit and vegetable juice, puree, canned food);
  • for stabilization of food and drinks, as antioxidant (addition in the course of processing or before packing allows to keep color, a smell and nutritional value);
  • as an improver of flour and the test (addition of vitamin C in fresh flour improves its baking qualities, thereby saving 4 - 8 weeks necessary for maturing of flour after a grinding);
  • for stabilization of color of fresh meat and meat products, decrease in necessary amount of the added nitrites and reduction of the nitritny rest in a ready - made product.
