Almond oil is a vegetable oil obtained from the seeds of sweet almonds (Amygdalus communis L. ), a plant of the Rosaceae family.
Almond oil is a light yellow liquid with a light aroma and a pleasant nutty flavor. The oil has a relative density of 1.04 - 1.05 and a refractive index of 1.527 - 1.537. It is almost insoluble in alcohol, but highly soluble in chloroform or ether.
Almost 62% almond oil consists of oleic acid triglycerides, about 24% linoleic acid triglycerides and 6% palmitic acid triglycerides. Also, the oil contains a significant amount of phytosterol, tocosterol, amygdalin, vitamins B2, A, E and mineral salts.

Linoleic acid (omega - 6) - 15 - 25%
Oleic acid (omega - 9) - 65 - 85%
Palmitic acid - 4%
Palmitoleic, alpha - linolenic, stearic acid in the amount up to 2.5 - 3%
Almond oil is obtained from the seeds of various varieties of sweet almonds. The kernels are removed from the seeds, dried and ground, and then pressed by the method of double cold pressing. The cake remaining after pressing is used for the preparation of cosmetics.
It is also possible to obtain almond oil from bitter almond seeds. For this, the seeds are preheated, while the amygdalin contained in them is destroyed. Such oil is unsuitable for use as a food product and is used exclusively for the preparation of cosmetics and technical purposes. The resulting cake is used in the pharmaceutical industry to obtain bitter almond water - a colorless liquid with a pleasant odor and bitter taste (contains 0.1% hydrocyanic acid).
Edible oil of sweet almonds is a good salad oil, "rounds off" the taste of rice dishes and various sauces. And the delicate aroma allows you to use it in the preparation of sweet dishes. Its inclusion in food leads to a decrease in total cholesterol due to a decrease in the fraction of "bad" cholesterol and an increase in the amount of "good" cholesterol, to a decrease in the level of acidity of gastric juice. For a variety of flavoring and healthy variations, it makes sense to get some sweet almond oil in your kitchen.
